  • 2 cup (raw) rice of your choice
  • 1 cup chopped scallions
  • 1 large white onion (i used Vidalia instead)
  • 1 1/2 cup cilantro leaves
  • 3 tbsp lime juice
  • 2 jalapeños with seeds*
  • 2 jalapeños without seeds
  • 2 tsp salt
  • 1 tbsp olive oil


Start cooking rice according to directions. Blend all other ingredients in blender until smooth. Serve sauce over or mixed with rice.

* Omit the jalapeños to make it mild, and just as good!
