This recipe will turn anyone into a cauliflower fan! Roasted cauliflower makes a great soup base.

Ingredients

  • 1 medium head cauliflower, cut into 1 1/2 inch chunks (approx 8 cups)
  • 2 tbsp extra- virgin olive oil
  • 1/4 tsp salt
  • 2 cloves garlic, minced or put through press

Instructions

Put oven rack in middle position and preheat oven to 470°F.

Toss cauliflower and garlic with oil and salt in a large bowl. Spread in 1 layer in a large shallow baking pan (1 inch deep) and roast, stirring and turning over occasionally, until tender and golden brown, 30 to 40 minutes.
